Manic Monday Recipe~ Sloppy Joes From Scratch


Not having anything planned for dinner tonight, I decided to search through my cupboard and fridge.  I had 2 pounds of ground beef and lots of hamburger buns.  We really weren't in the mood for hamburgers, but sloppy joes sounded really good.  I didn't have any Manwich though :(  I knew I had things to make it from scratch, so I searched and found one on AllRecipes.  I made a few adjustments to my recipe and I don't think I'll ever go back to the "can!"  I wanted to get some veggies into the sandwich, so I added some carrots.  You can add many different veggies to this like squash, zucchini, tomatoes, etc.

Ingredients:
2 pounds lean ground beef
1/4 cup chopped onion
1/4 cup chopped green bell pepper
1/4 cup chopped carrots
2 teaspoons yellow mustard
3/4 cup ketchup
2 Tablespoons brown sugar
2 Tablespoons BBQ Sauce
1 "6" ounce can tomato paste
1 "10" ounce can diced tomatoes with chilis
 
Directions:
In a medium skillet over medium heat, brown the carrots, onions, and green peppers.  Once they are tender, add the beef.  Cook and drain off liquids.
 After the meat is cooked, stir in the mustard, ketchup, tomato paste, and brown sugar; mix thoroughly.


Add BBQ Sauce and Diced Tomatoes.  Mix well and salt and pepper to taste.

Reduce heat, and simmer for 30 minutes.
