Manic Monday Recipe~ Ham and Cheese Quiche


I found this recipe on Freezer Meals for Us, and modified it a bit to fit my families taste buds.  I love making quiche for breakfast and dinner! Think about all of the delicious ingredients you could at to this!  Peppers, mushrooms, sausage, garlic, bacon, the list goes on!  It's a delicious and easy recipe.  Enjoy!

Ingredients:
9" pie shell, unbaked
5 large eggs
2 cups heavy cream/milk
1 tbs butter, softened
salt & pepper 
Dash of Parsley 
1/4 C. ham, cooked and chopped
2 cups shredded cheddar or other sharp cheese
1/4 C. Chopped Red Onion

Directions:
Preheat the oven to 425 degrees.
Grease pie pan and lay out Pie shell.  On the bottom of the shell, spread softened butter.
Lightly beat eggs in a bowl, then add cream, salt and pepper, and parsley.  Mix well.
In another bowl, mix onions, cheese and ham.  Place mixture at the bottom of the pie shell.
Pour the egg mixture into the pie shell.
Bake at 425 degrees for 15 minutes, then reduce heat to 300 degrees and bake for another 35 minutes.

Manic Monday Recipe~ Mini Tacos

Yeah, I like some taco with my sour cream ;)


I saw this amazing recipe from Emily Bites and knew I had to try them.  I hadn't planned on sharing them on my blog, but they were THAT GOOD!  The hubs asked if I could make them every week! Seriously these are a must try.

Ingredients:

Olive Oil
1 lb Ground Beef/Chicken/Turkey
1 T taco seasoning
1 Can black beans, drained and rinsed
48 Wonton Wrappers (found in the refrigerated produce section)
1 Jar of queso dip or salsa con queso 
1 Jar of chunky salsa 
2 C. Shredded Mexican cheese 


Directions: 
Preheat oven to 375 degrees.  

Heat olive oil/cooking spray in a large skillet and cook meet thoroughly.  Stir in taco seasoning and then the black beans.  Cook for a few minutes until the beans have warmed.

In a greased muffin pan, place wonton wrappers.  Spread a small dollop of queso dip into each wonton wrapper.  Next, add a spoonful of meat and bean mixture.  Then add a spoonful of salsa on top of the mixture.  Now add a sprinkle of shredded cheese.  Repeat by adding another layer of each ingredient. Each cup will have 2 layers of each ingredient.
Bake for 18-20 minutes, then allow five minutes of cooling before removing from muffin tin.

DIY~ Summer Wreath

 I've always loved the yarn wrapped wreath look, but I found a new way to jazz it up a bit thanks to The 36th Avenue Blog.  She added pearl head pins to add a special touch.  I loved it!  So I decided to create one with vibrant summer colors using that same idea. Hope it inspires you to create a new look for your front door!

Wreath Materials:
Wreath Form
Yarn
Fabric Circles in Various sizes and colors
Ribbon to hang wreath

Directions:
Wrap the wreath with your yarn.  It is okay to go over the same spot if you get gaps, just keep the yarn taught so that it doesn't get all bumpy.  The yarn will smooth out and find crevices to sit in.

Once you have your yarn wrapped, add pins sporadically.

To create your flower, fold your circle in half twice, so that you have a triangular shape.  Fluff the opening a bit, and use a stick pin to stick into the wreath form.  Just repeat that process a few times to create the desired flower.

Manic Monday Recipe~Mexican Rice Casserole


I am so happy I came across this recipe on Pinterest, because it is so ridiculously yummy!  I made it this weekend for dinner, and we all loved it.  I made a few changes to For the Love of Cooking's Recipe.  Please try this recipe if your family likes Mexican.  It will be a go to recipe for my family from now on!

 Ingredients:
1Pound Ground Beef/Turkey/Chicken

2 C. Prepared Rice (Um, yes I definitely used the short cut rice!)
1 Can Black Beans
1 Can RoTel Diced Tomatoes With Green Chiles
1 Tbsp. Fresh/Dried Cilantro
2 C. Cheddar/Mexican Cheese
1 Tbsp. Taco Seasoning
1/4 C. Chopped Red Onion

Start by browning your meat.  Once cooked thoroughly, add chopped onion and mix.
 Once the onions become a bit tender, then mix in the can of beans, tomatoes, and cilantro.
 Next add your rice and stir well!
 Spread rice mixture into a greased baking dish.
 Spread cheese over mixture and bake covered with tin foil at 350 degrees for 20 minutes.
 Enjoy your delicious casserole with a dollop of sour cream and guacamole!

DIY Quilted Tote Bag

I am in LOVE with this bag!  I was so excited to learn how to make it, but even more excited to use it.  In fact, I bought more fabric for two more bags!  I'll upload those photos once I get them done!  You can get the fabulous tutorial from Quilts Illustrated for $9.00.  (I have no affiliation with this site, I just loved the bag so much, that I had to share it!)


The friends that I created this with decided to make a few changes to the bag. 

Rather than having two 9x9 pockets inside, we chose to use one 4x9 pocket and one 9x9 pocket.  I only used one button on the front pocket.   You can choose to put one at each of the corners where your fabric meet.  If you are newer to quilting, this will help hide corners that don't line up.  FYI, once I got to sewing the fusible fleece, I used a denim/jean needle.  Here are some more photos of my bag.  Let me know if you have any questions!

Manic Monday Recipe~Russian Tea


While the weather has been warm for about a month down here in Texas, I know some of readers in the North could use a new warm drink recipe.  For some of you, this may be a family tradition, but I got my first taste of Russian Tea just early this year.  A friend of mine makes it every year during the holidays, but it is so good that it can be enjoyed year round.  You can make a quick batch and give it as holiday gifts, housewarming gifts, or even as a get well gift.  Enjoy this version of the recipe that my friend Jenna shared with me!

Ingredients:
2 Cups Tang

1.5 C. Sugar
2/3 C. Country Time Lemonade
1 C. Instant Tea
1 Tbl. Cinnamon
1 tsp. Ground Cloves


Directions:
Mix all ingredients thoroughly and seal in an air tight container like a glass jar or zip bag.




Directions for drink:
Mix approximately 2 heaping teaspoons of the mixture to 1 cup of warm water.  Add more or less to satisfy your taste buds!
