Yikes I forgot to post this yesterday!
We love sweet potato fries, but not the fat that comes with them being fried. We started baking them this past year when we were trying to lose weight, and love them. They are super easy to make and are delicious too. Check out my Shredded BBQ Chicken Recipe!

Ingredients:
3 Sweet Potatoes
Vegetable Oil Spray
Kosher Salt
Directions:
Peel and slice the potatoes in long strips.
Spray a cookie sheet with oil, and space the potatoes out so that they are not touching each other.
Spray the potatoes and sprinkle with salt.
Bake at 350 degrees for about 15-20 minutes, or until golden brown. Half way through, I like to flip the potatoes so that both sides get that yummy crunch.
