Manic Monday Recipe~Fettuccine With Spinach Cream Sauce



I saw this recipe and thought it looked so yummy.  So I tweaked it a bit to our family's likes and it turned out so good.

Ingredients:


Fettuccine Noodles
4 Tbsp. Butter
4 Tbsp. Flour
1 1/4 C. Milk
1 tsp. Garlic
1 tsp. Nutmeg
1/2 C. Parmesan Cheese
2 C. Chopped Spinach (Fresh or Frozen)
1 Pkg. Cherry or Grape Tomatoes


Directions: 

Begin by cooking your noodles according to the box.  Then start chopping your spinach into small pieces.  To make it easier to cut, I try to roll it up and then chop it.


Next, melt your butter.


 Once your butter is melted, add the flour.


 Stir to create a rue (thickening agent/gravy)


 Once your flour is mixed into the butter, add the milk.


 Next, add your cheese, garlic, and nutmeg.


 Once your sauce is mixed well, add your chopped spinach.


 Then mix your sauce and noodles in a bowl.  Keep the bits of sauce in the pan, then add a little olive oil and the tomatoes.


 Cook for about 5 minutes on medium heat stirring occasionally.  Once the tomatoes start to split, they should be done. 


Finally, make yourself a huge plate and enjoy!  I couldn't wait for leftovers the next day!
