Crustless Quiche Muffins


I made these Crustless Quiche Muffins last weekend for the family, and they were AMAZING!  I got the recipe from my mom a while back.  They were so good, we ended up eating them all day!  The recipe makes about 24 muffins.  This is such an easy recipe that will impress guests.  Serve with a fruit salad and you'll have the perfect breakfast!

Ingredients:
1 C. Chopped Onions
1 C. Diced Bacon (Turkey Bacon works well here too)
1 1/2 C. Shredded Cheddar
6 Eggs
1 1/2 C. Whole Milk or Cream
1/3 C. Chopped Chives
Salt and Pepper to taste

Directions:Preheat your oven to 425 degrees.  Cook the bacon for about 5 minutes.  
Whisk together your eggs and milk.  (Before adding milk, stab the yolks of the eggs for easy mixing.)
 Chop your chives and onions. (you could add your onions to the bacon pan to caramelize them, I didn't do this because I like a little crunch to my onions.)
 Add your onions, cheddar, bacon, and salt and pepper.  Mix together gently.
 Scoop mixture into greased muffin tins.
 Bake until tops are golden and custard is set in center.  (approximately 20-25 minutes.
