Manic Monday Recipe~ Banana Chocolate Chip Muffins


My sister-in-law shared this recipe with me.  It is so delicious, and my little lady loves it.  I didn't know about the mayo, because I'm not a fan (at all).  I have a pretty good detection skills on things that I don't like the taste of.  I couldn't taste the mayo at all.  Anyway hope you enjoy this recipe.  It's super easy.

Ingredients:
1 C. Mashed Bananas (2-3)
1 C. Mayo
3/4 C. White Sugar
2 C. Flour
1/2 tsp. Salt
2 tsp Baking Soda
1-2 C. Chocolate Chips
1-2 C. Butterscotch Chips (I omitted)

Directions:
Mix bananas, mayo, sugar, baking soda, and salt.


Add flour 1/2 of a cup at a time, then add chips.


Grease your muffin pan (or use muffin cups) and use an ice cream scooper to scoop mixture into pan.


Bake at 350 degrees for about 20-25 minutes.  (I cooked the first pan for 20 minutes and they were a touch darker than I'd like, so I only did 18 minutes on the second batch and they turned out perfect.  Every stove is different, so I'd watch these. I have a gas oven.)
