Manic Monday Recipe~ Sweet Potato Crisp

Sweet Potato Crisp
6 cups sweet potatoes (can be canned, baked, broiled or mashed)
1 cup sugar
4 eggs beaten
1 stick of melted butter
1/2 cup milk or heavy cream
1 tsp vanilla
Topping:
1 cup brown sugar
2/3 cup flour
2 cups chopped pecans (I like it without, but I pick them off because everyone loves them!)
2/3 cup softened butter
Whip together mashed sweet potatoes and eggs one at a time. Add in sugar, salt, melted butter that has been cooled a bit, milk, and vanilla. Whip this all together until it is blended through. Pour into 9x13 baking dish
Together in a bowl have brown sugar, flour, & softened butter. I usually just mix it with a fork ~ add pecans and mix. crumble evenly on top of potato mixture.
Bake @ 325 for 30 minutes or until internal temp is 180 degrees. Enjoy!

Always Check and Double Check Your Coupons!!!!
I posted about my trip to Walmart yesterday, and while figuring out the price for each, I noticed that the cashier didn't take off $2.00 worth of coupons. (even though she took them) She was flustered because she was new and had never rung in a Similac coupon before. So I called Walmart to see what they'd do. To my surprise, they said come in and we'll take care of it. So I went in and they gave me my $2.00 cash! Always watch to make sure that your coupons are coming off. There's always human/computer error. Watch as the cashier scans/enters them to ensure you get your money back. And always ask if you have a situation like I did.

Manic Monday Recipe~ Mac & Cheese

Wow is what I have to say about this recipe. It has got to be the best Homemade Mac & Cheese I have ever had. It is as good, if not better, as "Noodles, WI Mac & Cheese." It comes from The Taste of Homes Cookbook that I bought for my mother-in-law for Christmas. The chef's name is Cindy Hartley.

Ingredients
- 2 cups uncooked elbow macaroni (We used a whole box of
- noodles, it may be too rich with only 2 cups)
- 1/2 cup butter, cubed
- 1/2 cup all-purpose flour
- 1-1/2 cups 2% milk
- 1 cup (8 ounces) sour cream
- 8 ounces process cheese (Velveeta), cubed
- 1/4 cup grated Parmesan cheese
- 1/2 teaspoon salt
- 1/2 teaspoon ground mustard
- 1/2 teaspoon pepper
- 2 cups (8 ounces) shredded cheddar cheese
Directions
Cook macaroni according to package directions. Meanwhile, in a large saucepan, melt butter. Stir in flour until smooth. Gradually add milk. Bring to a boil; cook and stir for 2 minutes or until thickened.Reduce heat; stir in the sour cream, process cheese, Parmesan cheese, salt, mustard and pepper until smooth and cheese is melted.
Drain macaroni; toss with cheddar cheese. Transfer to a greased 3-qt. baking dish. Stir in cream sauce.
Bake, uncovered, at 350° for 35-40 minutes or until golden brown and bubbly.

Manic Monday Recipe ~ Ooey Gooey Butter Cookies (St. Louis Favorite)
I completely forgot to post my recipe this past Monday, so here it is...
One of my favorite foods that I found while in St. Louis is called Ooey Gooey Butter Cake/Cookies!
One of my teaching friends shared her recipe with me. Thanks Angie!
Ingredients:
8 oz cream cheese softened
1/2 c. butter softened
1 egg
1/4 tsp vanilla1 box yellow cake mix
Directions:
Preheat oven to 350 degrees. Mix all ingredients together. Then, roll into balls and bake for 10 minutes, then with powdered sugar.
One of my students also shared his family recipe with me. They are fairly similar.

Place cream cheese and butter in a bowl, and let them soften at room temperature for about 20 minutes. Then add the egg and vanilla, and mix with hand mixer. Then hand stir the cake mix into the batter (mix well). Take one teaspoon of mix and roll into ball, then roll into powder sugar. Place on ungreased cookie sheet, and bake 8 – 12 minutes.
